Tiny-cut salad : Eat it with a spoon, yum!

This chopped salad recipe is full of great flavors, colors and textures, featuring celery, carrots, red pepper, apple, cucumber, greens, cabbage, goat cheese and almonds. This is great for any holiday meal: you can let it stand and it stays crisp.

Ingredients1/4 cup white-wine vinegar
1/4 cup extra-virgin olive oil
1 teaspoon honey
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
3 medium stalks celery, diced (1/4-inch)
2 medium carrots, diced (1/4-inch)
1 large red bell pepper, diced (1/4-inch)
1 medium apple, peeled and diced (1/4-inch)
1/2 large cucumber, peeled, seeded and diced (1/4-inch)
1 cup sliced Treviso (see Tips) or radicchio
1 cup sliced arugula, any tough stems removed
1 cup thinly sliced napa, Savoy or other soft cabbage
1 cup crumbled goat cheese
1/2 cup toasted slivered almonds (see Tips)


Preparation1.Whisk vinegar, oil, honey, salt and pepper in a large salad bowl until well combined.
2.Add celery, carrots and bell pepper to the vinaigrette. Let marinate for at least 10 minutes and up to 1 hour.
3.Add apple, cucumber, Treviso (or radicchio), arugula and cabbage to the bowl; toss to coat. Add goat cheese and almonds and toss to combine.
Total time : 35 minutes

Tips & NotesMake Ahead Tip: Prepare through Step 2 up to one hour ahead.
Tips: Treviso is a slender variety of radicchio. Look for it with specialty salad greens in well-stocked markets.
To toast chopped, small or sliced nuts, cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.

200 calories; 16 g fat ( 5 g sat , 9 g mono ); 15 mg cholesterol; 9 g carbohydrates; 1 g added sugars; 7 g protein; 3 g fiber; 148 mg sodium; 273 mg potassium.

Randa's tip:
For this quick easy-to-make salad, don't hesitate to exchange, remove or add ingredients! just open your fridge and choose from what's available in vegetables and fruits...also, keep in mind that the goat cheese could be replaced with some feta or halloumi! Red grapes would be very tasty with the cheese.
Make sure you keep the dressing as it is....it's simply delicious with the honey! It adds a sweet and sour taste to your salad.

Lemon Chicken Stir-Fry : A healthy alternative

Spiked with lots of zesty lemon, this delectable chicken stir-fry has a colorful mix of snow peas, carrots and scallions. But feel free to substitute other thinly sliced vegetables, such as bell peppers or zucchini. Serve with: Rice noodles or brown rice.
 
Servings: 4
Yield: 4 servings, about 1 1/2 cups each
Total Time: 40 minutes
Prep Time: 40 minutes
 
Recipe Ingredients:
  • 1 lemon
  • 1/2 cup reduced-sodium chicken broth
  • 3 tablespoons reduced-sodium soy sauce
  • 2 teaspoons cornstarch
  • 1 tablespoon canola oil
  • 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
  • 10 ounces mushrooms, halved or quartered
  • 1 cup diagonally sliced carrots (1/4 inch thick)
  • 2 cups snow peas (6 ounces), stems and strings removed
  • 1 bunch scallions, cut into 1-inch pieces, white and green parts divided
  • 1 tablespoon chopped garlic
 
Recipe Steps: 
  1. Grate 1 teaspoon lemon zest and set aside. Juice the lemon and whisk 3 tablespoons of the juice with broth, soy sauce and cornstarch in a small bowl.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, until just cooked through, 4 to 5 minutes. Transfer to a plate with tongs.
  3. Add mushrooms and carrots to the pan and cook until the carrots are just tender, about 5 minutes. Add snow peas, scallion whites, garlic and the reserved lemon zest. Cook, stirring, until fragrant, 30 seconds. Whisk the broth mixture and add to the pan; cook, stirring, until thickened, 2 to 3 minutes. Add scallion greens and the chicken and any accumulated juices; cook, stirring, until heated through, 1 to 2 minutes.
